Pomegranate Smoothie Recipe

Servings: 2 Servings

  • 1 large ripe pomegranate
  • 1/2 cup fresh black currants
  • 1/2 cup fresh blueberries
  • 5 fl. oz natural yogurt
  • 9 fl. oz 2% organic milk
  • confectioner's sugar

Roll the pomegranate over a work surface with the flat of your hand, applying light pressure. Then cut off the top and bottom, cut into sections lengthwise, and turn inside out to release the seeds. Reserve a couple of pieces for decoration. Finely process the rest of the fruit and push through a sieve.

Place the pomegranate juice into a blender with the washed blueberries, black currants and yogurt then process. Sweeten to taste using the confectioner's sugar.

Add enough milk to produce the desired consistency and process again. Decorate with pomegranate seeds.
